A local company called The Frosting Queens was generous enough to donate packets of their yummy frosting for the book launch. I snagged a couple of packets of their all-natural frosting to try for myself! I was really excited about the caramel flavor because it’s not a common flavor sold in grocery stores.
First, I tasted the frosting on it’s own and was really impressed with how home-made it tastes. The “Charmed Chocolate” was decedent, the “Crowned Caramel” tasted just like a caramel square – only in frosting form (and easier to chew)! I loved that the frosting came in packets, rather than in cans, because it was really easy to squeeze into a piping bag that way.
One of my girlfriends requested a chocolate, salted-caramel dessert for our crafty get-together so I figured they were the perfect guinea pigs for a new recipe – chocolate cupcakes with salted caramel + chocolate frosting.
Start by preparing chocolate cupcakes using your favorite recipe or boxed mix. I used a boxed mix. Shhhh….don’t tell…
Squeeze the caramel frosting into a small bowl. Add 2-3 small pinches of sea salt to the frosting – add one pinch of salt at a time, mixing and tasting in between, until you achieve the desired amount of saltiness. The caramel frosting is actually really good on it’s own but the salt adds a nice contrast to the sweetness – especially since we’re doubling up on the frosting flavors.
Start by piping one circle of salted caramel frosting, around the perimeter of the cupcake (I used a large star tip with my pastry bag). After you’ve got a circle of caramel frosting on each cupcake, switch out your caramel pastry bag for chocolate. Pipe the rest of the “swirl” on top of the cupcake with chocolate.
I love the look of the double frosting and these cupcakes were seriously addicting! Thanks to The Frosting Queens, I was able to fool my friends into thinking these were made from scratch……uh oh…I think I just let the cat out of the bag…
